Insbesondere bei K\u00e4se mit gesch\u00fctzter Ursprungsbezeichnung (g.U.) werden die Herstellungsverfahren und die Mindestreifezeiten durch die Produktionsvorschriften festgelegt: die Voraussetzungen, die f\u00fcr die Erlangung der g.U.-Zertifizierung von K\u00e4se erf\u00fcllt sein m\u00fcssen. <\/p>\n<p>Es handelt sich um einen kritischen Prozessschritt, der den Einsatz technologisch fortschrittlicher Anlagen und Ger\u00e4te zur Kontrolle von Temperatur und Luftfeuchtigkeit w\u00e4hrend des gesamten Reifungsprozesses erfordert.
