Das Rezept stammt von dem K\u00e4ser Gioacchino, nach dem er benannt ist. Er hei\u00dft eigentlich Gio wie Gioacchino und -Vacco, weil er mit Kuhmilch hergestellt wird. Seine Reifung ist zentripetal, d.h. er neigt dazu, in der Unterkruste zu cremen, wenn er \u00fcber 40 Tage alt ist.
