For PDO cheeses in particular, production regulations define the required techniques and minimum aging times that must be met for PDO certification. <\/p>\n<p>This is a delicate stage that requires technologically advanced facilities and equipment capable of precisely controlling temperature and humidity levels throughout the entire aging process.
