The deep product knowledge and refined sensibility of our artisans guide this particular stage of production, resulting in cheeses that \u2014 while preserving their original characteristics \u2014 take on a distinctive, truly unique identity. <\/p>\n

The ideas and creativity of Luca and Alessio Del Ben are central to crafting cheeses of undisputed excellence. Del Ben Formaggi perpetuates the tradition of aging in natural stone cellars and caves. Entrusted to the skilled hands of our affineurs, the wheels ripen slowly on fir wood boards in an environment defined by precise conditions of humidity, temperature, ventilation, silence, and darkness. This creates an ideal setting in which natural molds and the aromas released by the boards work together to enrich the cheese’s aromatic profile. <\/p>\n

At the same time, air sanitization and shelf-cleaning procedures prevent the development of undesirable and harmful molds, as well as the build-up of fats and substances that would otherwise degrade the product.<\/p>\n
