Maturation du fromage<\/h1>\n

[\/vc_column_text][vc_column_text]La maturation est le processus fondamental par lequel un fromage atteint sa maturit\u00e9 optimale. Concernant les fromages AOP, les cahiers des charges d\u00e9finissent les techniques de production et les dur\u00e9es minimales de maturation : autant de conditions indispensables \u00e0 l’obtention de la certification AOP. <\/p>\n

C’est une \u00e9tape d\u00e9licate, qui n\u00e9cessite des structures et des \u00e9quipements technologiquement avanc\u00e9s permettant de contr\u00f4ler la temp\u00e9rature et le taux d’humidit\u00e9 tout au long du processus. Au cours de cette phase, le fromage ach\u00e8ve l’\u00e9gouttage \u2014 c’est-\u00e0-dire l’\u00e9limination de l’eau et du petit-lait \u2014 et acquiert la forme et les caract\u00e9ristiques organoleptiques qui lui sont propres. <\/p>\n

La maturation sur des \u00e9tag\u00e8res en bois de sapin s’effectue dans des caves \u00e0 temp\u00e9rature contr\u00f4l\u00e9e, o\u00f9 les unit\u00e9s de traitement de l’air en garantissent la purification et l’assainissement.<\/p>\n
