La recette est celle du fromager Gioacchino, qui lui a donn\u00e9 son nom. Il s&#8217;appelle en fait Gio-like Gioacchino et -Vacco parce qu&#8217;il est fabriqu\u00e9 avec du lait de vache. Sa maturation est centrip\u00e8te, il a donc tendance \u00e0 cr\u00e9mer en sous-cro\u00fbte lorsqu&#8217;il est \u00e2g\u00e9 de plus de 40 jours.
