In the Del Ben family, at grandfather Modesto’s country house, there was once a custom of “copar el porzel,” that is, of slaughtering pigs at home and producing meat and cured meats for family, relatives, and friends. From this beautiful tradition was born the idea of ​​creating a salami that recalled the ancient home recipe.
