Our production process

  • Our cheesemaking process is precise and well-organised. Every day, fresh milk arrives at our dairy, ready to be transformed into the delicious cheeses you love. Cheeses production is carefully supervised, with particular emphasis on process. This stage of production yields a byproduct of fundamental importance: whey, which forms the primary base for our ricotta. Each finished product is thoroughly inspected; if any imperfection arises, we assess the situation and, if possible, set the product aside for later restoration and reintroduction into production. Once strict quality control is complete, our cheeses are promptly brought to market or sold directly at our farm shop, ready to be enjoyed.

In addition, our geographical proximity to our supplier network allows efficient logistics management, reducing our environmental impact on the local ecosystem.

Supply chain control guarantees the exclusively Italian origin of the milk and its high quality, avoiding the use of preservatives in cheese production.

Ethical assessment of farm conditions and animal welfare are fundamental to our choice of suppliers; that’s why we work exclusively with farms that guarantee adequate housing and sufficient space for their animals, ensuring balanced nutrition.

We have chosen the Pezzata Rossa Friulana cow breed, prioritising a native breed that represents a genetic and cultural heritage of our region. Known for its disease resistance, it can be reared in a healthy and natural way.

Another characteristic that won us over is its milk, rich in beta-caseins, making it more wholesome and easily digestible.

Quality over quantity — that’s our guiding principle. We firmly believe that milk from the Pezzata Rossa Friulana is a fundamental ingredient in crafting cheeses of extraordinary authenticity and flavor.

During these sessions, we use brainstorming to identify emerging market trends and customer preferences, then work closely with our production team to bring these ideas to life through trials and tastings. But our process doesn’t stop there. We also organize customer tests at events to gather direct feedback from the public and evaluate the quality of our products.

Customer reviews are always taken into consideration — including public feedback collected at trade shows and events — so we can continually refine our offerings and stay in tune with what the market needs.

One example of this approach is the reduction of product weight across some of our cheeses, responding to the growing demand for lighter, more convenient options.

We have also developed products tailored to specific dietary needs — including cheeses crafted for lactose-intolerant consumers.

For this reason, our online shop features a dedicated product line — the Naturally Lactose-Free collection — made with less than 0.001% lactose.
