In the production of Latteria d’Aviano cheeses — a company acquired by the Del Ben family in 2012 — we pay particular attention to the origin of our raw materials. The milk processed in our facilities comes mainly from farms in the surrounding area, renowned for their commitment to animal welfare. Milk is a living raw material: to preserve its qualities, it must not be subjected to significant stress.
We consider zero-kilometer raw materials and GMO-free ingredients as the hallmark of a truly premium product. Our catalog features cow’s, sheep’s, buffalo, and goat’s milk cheeses, alongside a selection of PDO (Protected Designation of Origin) and nationally acclaimed cheeses — including Grana Padano PDO, Parmigiano Reggiano, Gorgonzola PDO, Buffalo Mozzarella from Campania PDO, and Pecorino PDO.
In addition to Montasio PDO — for which we are officially certified agers — we are proud to highlight our buffalo and goat products under the Latteria d’Aviano brand: buffalo mozzarella, buffalo stracchino, goat caciotta, and goat ricotta. Buffalo milk sourced from a farm in Aviano, in the Pordenone foothills, enables truly local, zero-kilometer production of ricotta and mozzarella.
Be sure to try our specialties — true delicacies deeply rooted in Friulian culinary tradition. Savor frico with potatoes (available with onion, radicchio, radicchio and sausage, porcini mushrooms, sausage, or speck) and formadi frant, an undisputed excellence of our land. Our aged cheese selection is equally distinctive: the ubriachi, soaked in Schioppettino di Moschioni wine, the Gran Modesto sottopaglia, and the I’taliko — a truly unique cheese aged with tobacco leaves.
