This is a delicate stage that requires technologically advanced facilities and equipment capable of precisely controlling temperature and humidity levels throughout the entire aging process. During this phase, the cheese completes its spurgo — the draining of excess moisture and whey — and develops its characteristic shape and sensory profile.
Aging takes place on fir wood boards in temperature-controlled rooms, where climate control systems ensure continuous air purification and sanitization.
