Butter Latteria d’Aviano Cheese is produced using whey from the processing of our cheeses as in the old traditional dairies. In fact, our philosophy is linked to the ancient vision of recovering all by-products to reduce food waste. The production of whey butter uses methods that are time-consuming, labor-intensive and specific skills possessed by a limited number of dairy workers. That is why we have remained among the few to do so.
Its FLAVOR is vaguely reminiscent of cheese; it is slightly acidic, sweet and with hints of hazelnut. It proves versatile in culinary use and can be used for cooking, preparing baked goods or as a simple condiment.
