Affinage is an ancient craft sustained by passion, experience, and creativity. The ideas and creativity of Luca and Alessio Del Ben are central to crafting cheeses of undisputed excellence. Del Ben Formaggi perpetuates the tradition of aging in natural stone cellars and caves. Entrusted to the skilled hands of our affineurs, the wheels ripen slowly on fir wood boards in an environment defined by precise conditions of humidity, temperature, ventilation, silence, and darkness. This creates an ideal setting in which natural molds and the aromas released by the boards work together to enrich the cheese’s aromatic profile.

At the same time, air sanitization and shelf-cleaning procedures prevent the development of undesirable and harmful molds, as well as the build-up of fats and substances that would otherwise degrade the product.

Del Ben Formaggi offers affinage services both in-house and for third-party clients, with the option to fully customize the product to each client’s specific needs.
