Smo’king Sweet Smoked Blue-veined Cheese

Smo’king cheese is a very ancient preservation technique, passed down through the ages. We’ve revived this practice using a handcrafted smokehouse made exclusively from natural beech wood. After using it on classic semi-hard cheeses and ricottas, we decided to try it in a sweet and creamy blue cheese.

The result was amazing. Smoking is an intriguing and delicious cheese, where the sweetness of the cheese blends with the sweetness of the beech wood smoke.

Suitable for any occasion, excellent even as an aperitif, one spoonful leads to another.

NATURALLY LACTOSE-FREE.

The product can be intended for the entire population with the exception of those who are allergic to the above ingredients or to milk components.

SENSORY CHARACTERISTICS

EXTERNAL APPEARANCE: Rough rind, grey and/or pinkish depending on the aging environment, firm and elastic in texture. Not edible.
INTERNAL APPEARANCE: White or straw color, mottled uniformly light green for moderate mold development
PASTE STRUCTURE : Soft, smooth, slightly creamy to creamy paste

FLAVOR: Slightly sharp, tending toward sweet, characteristic
