Ossocollo or Coppa is a cured meat prepared using pork neck muscles.
Del Ben uses strictly selected meats from Italian pigs. The process is delicate, time-consuming, and requires skill.
It is important to salt the meat evenly, massaging it carefully to evenly penetrate not only the salt, but all the natural aromas that characterize it, such as pepper, garlic, and various spices.
Before being bagged, it is left to rest for a few days.
A tasty cured meat with a deep red color, elegant yet bold. Excellent for a platter or paired with meat-based dishes, such as roulades.
