Pitina is a meatball made from a selection of meats, mostly mutton and/or game, salted, spiced, smoked, and mashed with cornmeal. It’s an ancient recipe from the Friulian valleys, especially the Tramontina Valley, where it’s even a Slow Food Presidium.

It was created to preserve the meat of the area’s typical animals, and today it is a highly prized cured meat for its intense yet delicate and elegant flavor. It is not stuffed into a casing and is therefore completely edible.

It can be sliced ​​with a knife and placed on a cutting board or paired with traditional dishes like polenta with mushrooms or paired with Formadi Frant. It’s also delicious in risottos.
